Oatmeal, the all-time favorite cooked cereal, is available as old-fashioned rolled, quick cooking, steel cut, and, of course, instant. This recipe and the two following cooked cereals are made with the old-fashioned flavors of brown sugar or maple syrup and spices.
Bring to a boil in a medium saucepan:
2 cups water
Stir in until blended:
1 1/2 old-fashioned rolled oats
1/3 cup raisins
Pinch of salt
Reduce the heat and simmer, uncovered, for 10 minutes. Stir in:
1 teaspoon vanilla
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg or ground nutmeg
Top each serving with:
1 to 2 tablespoons light or dark brown sugar or pure maple syrup
